When I open my lenses in the Dashboard, it's not showing any analytics. How can I get these to update? I know that they've been viewed/shared/and scanned at least 25 times by people in my office, plus the people we shared it with at the event they were created for.

While your Lenses had received enough views and scans to be visible, they hadn't quite hit the "5" benchmark in shares necessary to see statistics at all.
That being said, I think you'll be able to see the statistics tomorrow :).
