Unfortunately, it's likely due to the operating system or hardware you're using – since they don't meet the system requirements for Lens Studio.

Minimum Requirements
Operating System: Windows 10 (64 bit); MacOS 10.11+
Hardware: Minimum of Intel Core i3 2.5Ghz or AMD Phenom II 2.6Ghz with 4 GB RAM; Intel HD Graphics 4000 / Nvidia GeForce 710 / AMD Radeon HD 6450 or better; screen resolution of 1280x768 or higher

Hi Deb,
While it's not currently possible to grab a user's Display name in Lens Studio, you could have the users input their own name with the Label component. You could add a keyboard as the following creators did in their Lenses:

The client referenced a lens they found in their carousel (It's not in mine). I've attached the picture of the lens here. They claim the user's name is pulled in. Is this a snappable?

This Lens is not a Snappable, but it does pull in the Display name. That said, it's not a community Lens, but rather an internally made one. Lens Studio does not currently offer the ability to pull such data, but I can let the engineers you'd like to utilize such a feature.
